Delicious Dinner - Buffalo Chicken Pasta Bake

My fiance, Jon, and I are obsessed with anything buffalo chicken. We first fell in love with our friend Alex's buffalo chicken dip and then revised his recipe to suit our tastes. Now I've discovered Buffalo Chicken Pasta Bake. Yum!

Ingredients
  • 1 lb cooked penne pasta (any type of pasta except spaghetti/angel hair will do)
  • 1lb boneless, skinless chicken breasts, cubed
  • 1 small red onion, sliced thin
  • 3/4 cup sour cream
  • 3/4 cup blue cheese dressing
  • 1/2 cup Franks red hot sauce (or any buffalo style sauce)
  • 1-1.5 cups shredded swiss, provolone, cheddar, whatever you like (we used mozzarella)
  • 1/2 cup bread crumbs
  • No stick spray
  • olive oil or butter
  • cayenne pepper
  • crushed red pepper

Directions
  • Preheat oven to 375 F.
  • Prepare pasta according to packaging's directions. Drain and set aside.
  • Meanwhile, heat about a tablespoon of olive oil or butter in a large skillet over medium-high heat. In the skillet, sprinkle cayenne pepper and crushed red pepper on the chicken to taste. Jon and I love it spicy, so we use a lot. Cook chicken 3-4 minutes, or until it is nearly done.
  • Add chopped onions and cook another couple minutes until chicken is done and onions are starting to break down.Season to taste with salt and pepper.
  • Combine sour cream, blue cheese dressing, and Franks red hot sauce in a bowl. Toss chicken and onions with pasta. Add sauce and toss again to coat well. Transfer pasta mixture to a 13x9 casserole lightly hit with no stick spray.
  • Top casserole with shredded cheese and bread crumbs. Bake 10-15 minutes or until heated through. Place under broiler last couple minutes if you like your cheese browned and bubbly.
