Menu Plan Monday 7/12 - 7/18


It's been awhile since I've formally written out a Menu Plan Monday. Nearly four years in fact. But I have been pre-planning our meals using a dry erase board on our refrigerator. It helps me remember to defrost what needs to be defrosted and it minimizes the number of times my husband asks me, "what's for supper?"

Right now we're trying to clear out some space in the freezer. We did a really big Restaurant Depot haul back in May so we want to make sure we're using some of our older frozen perishables. 

Sunday - Chicken quesadillas with mushrooms, onions and peppers
Monday - Mighty Spark turkey burgers with sauteed broccoli and tater tots (a meal is donated for every package sold!)
Tuesday - Pork chops with roasted potatoes and zucchini
Wednesday - Grilled shrimp burritos with rice, black beans, shredded Brussels sprouts and diced cherry tomatoes
Thursday - Spaghetti with chicken sausage
Friday - We usually order take-out once a week now
Saturday - My husband has a fun sailing race planned, so I'll have leftovers!

Menu Plan Monday 8/14 - 8/20



Last week was quite an eventful week, but not good-eventful. Like, give-me-an-ongoing-headache eventful. I tagged along on my husband's trip to NYC and on the drive up, we were rear ended getting off one highway and onto another. Both of us are fine, but my car -- not so much. So now we have the headache of insurance claims, appraisals, etc.






One of the few bright sides to the week is we ended it by celebrating our 5 year wedding anniversary. It's kind of surreal - I feel like I walked down the aisle just yesterday!



So this week our goal was 100% easy, brainless meals.

Sunday - Kielbasa potato bake

Monday - Grilled chicken thighs, zucchini and rice

Tuesday -  Crockpot veal chili over polenta

Wednesday - IHOP - my younger brother turned 22 on Monday and he REALLY wanted to go to IHOP

Thursday - Turkey ham with glaze, coucous and brussels sprouts

Friday - Pasta bake with chicken

Saturday - BLTs using tomatoes from our garden, edamame, tater tots and zucchini

Menu Plan Monday: 8/10 - 8/16


Not much exciting going on in CMM's household this week. Although I didn't attend, I have photographic evidence that my husband is a true party animal -- he nodded off, on numerous occasions, during the Deftones/Incubus concert at the Xfinity Center last Friday. I know we just came back from vacation, but I think he needs another one!


This week, my dearest sleepy husband and I celebrate our fourth wedding anniversary. As a result, there are a few extra nights of eating out that we don't typically have. I can't believe it's been four years already! I feel like I walked down the aisle yesterday!



Monday - Eggplant & chicken sausage lasagne

Tuesday - Shrimp tacos

Wednesday - Pork chops, apple sauce, couscous, zucchini

Thursday - Anniversary Dinner out to eat

Friday - My in-laws are taking us out to eat to celebrate our anniversary

Saturday - Cook out party at our friends' house - I'll be searching for a gluten free recipe to bring along -- any ideas? comment with the recipe!

Sunday -  My brother's 21st birthday is 8/15, so we're celebrating!! Burgers, chips, tomato salad

My baby brother, Nick, is on the right. He's 8 1/2 years younger than me... he's all grown up now!

Menu Plan Monday: 8/3- 8/9


Sorry for skipping last week's Menu Plan Monday post, but my husband, our pup Riley and I were camping in Nickerson State Park in the Cape all week. Although I didn't post about it, I actually plan out all 3 meals when camping so that I can buy just enough food so that we don't run out, but don't have a ton leftover.

This week is pretty laid-back and I'm still trying to clear out the random odds and ends in my stockpile and freezer. While we were gone, the roofers came and redid our existing roof and roofed the new roof on the garage. It looks fabulous and is one more giant step towards completing this renovation from hell. Not much is left that is very time sensitive so I don't have to run around, scrambling to feed helpers.



Monday - Chicken sausage, mashed potatoes, edamama, zucchini

Tuesday - Crockpot beef chili

Wednesday - Ravioli with chicken

Thursday - Baked fish with broccoli and couscous

Friday - It's just me - so I'll try to eat leftovers or breakfast for dinner (my favorite)

Saturday - Date night out to eat

Sunday -  Family Dinner at my in laws'!

Menu Plan Monday: 7/20 - 7/26


My life has been semi-consumed by an enormous endeavor my husband took on in the last several months. Building a garage that is 2/3rds the size of our entire house has made all of our normal routines abruptly cease. After his 8 hour work day, Jon spends the next 4-5 hours of daylight (and sometimes into night) working on construction projects. It's been breath-taking to watch. But as a result, I have had to feed lunch to anywhere from 1 to 5 manly crew members each weekend day.

Although a lot of work, it has been helpful in accomplishing my goal of clearing out my freezer stockpile. And, it often leaves random leftovers we can use for dinners later in the week, which is exactly what I'm doing in this week's Menu Plan Monday.



Monday - BBQ naan pizzas
(using shredded BBQ chicken I cooked in the crockpot for the crewmen on Saturday)

Tuesday - Pork chops, apple sauce, mashed potatoes, Brussels sprouts

Wednesday - Dinner plans through Providence's Restaurant Week!

Thursday - Ham tetrazzini made with spaghetti squash

Friday - Marinated chicken breast, macaroni salad (made for the crewmen), Brussels sprouts

Saturday - Date night out to eat

Sunday -  Family Dinner at my in laws'!

Menu Plan Monday: 7/13 - 7/19



The heat has been unbearable here lately. I like it in the 60s but it's been 80s+ here, with some days in the 90s. To boot, my husband's been busting his butt after work building our garage addition in that heat. I don't know how he does it.

We're planning a camping trip in a few weeks and we usually use my hubby's beer fridge freezer to stock food/ice for the trip. Somehow that freezer has been taken over by other things so I really need to plan meals around what needs to leave the freezer. We also still have a ton of zucchini left over from the neighbors that I plan on using, along with making some more zucchini muffins.

Monday - Spinach tortellini

Tuesday - Perdue breaded tenders with broccoli and edamame

Wednesday - Lloyd's BBQ beef sandwiches, potato salad and zucchini

Thursday - Pork chops, couscous, applesauce and zucchini

Friday - Buffalo chicken naan pizzas with sauteed onions, peppers and zucchini

Saturday - Out to eat, then drinks with our friends from out of state!

Sunday -  Family Dinner! My in-laws will be back from Myrtle Beach and we'll head on over there for our weekly family night. We'll be bringing pre-made apple pie since we need to start clearing out our freezer!

Menu Plan Monday: 7/6 - 7/12



I hope everyone had a wonderful and safe Fourth of July! I had my fair share of cookout food so I think I can shy away from a regular burger or hot dog for awhile.


Monday - Spaghetti squash mac n' cheese - this recipe is coming right up in this week's What's Cookin' Wednesday post - stay tuned!

Tuesday - Banana split and strawberry crepes

Today marks one year since our beloved furbaby, Blue, passed. One of her favorite foods was crepes. If you left your plate for even 10 seconds, she'd sneak in for a taste. We're having crepes in her honor as we remember all the great times we had with her in her 16+ years of life.

Wednesday - Buffalo chicken burgers with baked beans and salad

Our neighbor has been gracious enough to share her lettuce harvest, so we've get lettuce for days that we must use up!

Thursday - Baked chicken, baked potato, broccoli and salad

Friday - Out to eat

Saturday - Pork chops, apple sauce, couscous and broccoli

Sunday - Usually this is family dinner night, but our family has left us for vacation to Myrtle Beach! So we'll have Chinese.... homemade, healthy Chinese that is! General Tso's Chicken

Menu Plan Monday - 6/29 - 7/5




It's been awhile since I've menu planned. As a result, my stockpile in my pantry and my freezer has run amok. I've got stuff in the back of the freezer I don't even know about, some of my pantry stockpile has expired and we've gone out to eat on several occasions simply because I don't have the energy to cook come dinnertime or I forgot to take something out to defrost.

This just proves how integral it is to our family that I menu plan. In addition, my husband was recently diagnosed with high cholesterol - something that unfortunately runs in his family. As a result, we've been making changes here and there to what we eat while we're at home.

Monday - Ground turkey American chop suey

with red peppers, broccoli/cauliflower and whatever other veggies I can hide in it. I also sneak some beans in my chop suey - sometimes I'll put some drained kidney beans or I'll smash up half a can of chickpeas. It makes the sauce creamy and thick and the rest of my family has no idea.

Tuesday - Sauteed shrimp naan pizza

I use the 90 calorie Flat-Out wraps as my base and my husband uses wheat naan bread. We add sauteed red peppers and onions and a bit of Sriracha for a kick

Wednesday - My husband's away on business so my sister and I will probably have breakfast for dinner - our favorite go to when hubby's away.

Thursday - Chicken quesadillas

with reduced fat cheese, avocado and sauteed onions, peppers and mushrooms. I make my chicken in the crockpot. Drop a couple of large chicken breasts in a slow cooker along with a jar of salsa. Set it low for 7-8 hours and then you can fork shred it in no time. I keep leftovers in the fridge for sandwiches, salads and tacos for lunch later in the week.

Friday - It's the 3rd of July and I grew up participating in every single Fourth of July festivity available in Bristol, RI. This includes the Bristol Fourth Fireworks! Therefore, we'll probably head out to dinner near Bristol so we get prime seating for the fireworks display.

Saturday - Fourth of July cookout; we'll be bringing a dish but it's currently to be determined. Any suggestions!?

Sunday - Every year my in-laws throw an enormous Fourth of July bash. We'll be heading to their house and will spend the majority of the day there.

Menu Plan Monday 2/2 - 2/8




I have very little control over this week's menu plan. I spent a glorious three hours at the urgi-center yesterday to discover I have pneumonia. As a result, my husband and sister won't allow me to get near anything that could potentially be consumed by someone else.

Thus, my sister and husband are tag-teaming to ensure dinner is made the first half of the week. From Thursday on, I'm on my own, literally. I'll be most likely eating chips and cookies by myself, while crying myself to sleep on the couch.... just kidding, kind of.

Sunday - Family Dinner at my in laws' house. I stayed home, sick. By myself. *sigh*

Monday - Chicken quesadillas - sauteed peppers and onions with yummy chicken and cheese

Tuesday - Creamy pesto chicken pasta - we're going to adapt this delicious looking recipe from A Beautiful Bite. And by we, I mean my husband and sister will physically assemble and I will supervise from the confines of my quarantined area on the sofa

Wednesday - Crock pot beef stew (I think my husband will let me touch the crockpot 'on' button)

Thursday - Chips & cookies.... just kidding... probably not. Whatever I have the energy to pull from the cabinet and microwave

Friday - Chips & cookies.... just kidding... probably not. Whatever I have the energy to pull from the cabinet and microwave

Saturday - Maybe I can convince my parents to come over and feed me? I should be well enough by then!

Menu Plan Monday 1/12 - 1/18



Sorry this week's Menu Plan is a day late. I do have it planned out on a dry erase board on my refrigerator but blogging about it slipped my mind.

Sunday - Family Dinner at my in laws' house. We made nachos to bring over.

Monday - Naan pizzas. My husband made shaved steak pizza on naan bread with onions and black olives. My sister and I had fig jam, baby spinach, goat cheese and balsamic reduction on our naan pizzas.

Tuesday - Parmesan baked pollock, spinach salad and roasted sweet potatoes

Wednesday - Dinner out at The Cheeseplate to use a Livingsocial deal that will expire this week.

Thursday - Shrimp tacos

Friday - Baked chicken, couscous and spinach salad

Saturday - Dinner out

Menu Plan Monday: 1/5 - 1/11




This week's menu planning is sort of a huge cop-out. For Christmas, I told my parents they weren't getting physical stuff this year. Instead, I'll be taking each out separately to a nice restaurant for dinner. They don't usually go out to eat ever and if they do, it's usually a bargain-end restaurant. Lucky for me, the next two weeks are Restaurant Week in the Providence, RI area so I'll be getting great deals on delicious food for my parents. To boot, I use OpenTable to make my reservations and earn points when I check in using the reservations. 2000 points = $20 dining check :-)


Sunday - Family Dinner at my in laws' house.

Monday - My sister and I are taking our mom to Chardonnay's in Seekonk, MA.

Tuesday - Steak tips and spinach salad

Wednesday - My sister, my husband and I are taking our dad to Ruth's Chris in Providence, MA.

Thursday - Brinner (crepes, eggs, etc.)

Friday - Pork chops, apple sauce and broccoli

Saturday - Baked chicken, couscous and spinach salad

Menu Plan Monday 12/29 - 1/4






Sunday - Family Dinner; I brought over some left-over muddy buddies my sister made last week. I couldn't stand one more day of having an exorbitant amount of treats in my house.

Monday - Spaghetti with vodka sauce and shrimp

Tuesday - Steak tips and spinach salad

Wednesday - My hubby and I are celebrating New Year's Eve together at Red Stripe. We used OpenTable to make our reservations and are so close to getting a $20 dining check!

Thursday - Fish tacos

Friday - Pork chops, apple sauce and broccoli

Saturday - Baked chicken, couscous and spinach salad

Menu Play Monday: 8/19 - 8/25




Monday - My brother's birthday dinner; we're going to my mom's for pizza. I made this delicious-looking Upside Down German Chocolate Cake. Hopefully it tastes as good as it looks!

Tuesday - No-noodle Lasagna with meat sauce

Wednesday - Beer chili in the crockpot, baked potatoes and beer bread

Thursday - Baby back ribs, mashed potatoes and broccoli

Friday - Pork chops, cauliflower and apple sauce

Saturday - Burgers and tater tots.

Sunday - Family dinner at my in-laws' house.

Menu Plan Monday: 2/24 - 3/2

 
Sunday - Family Dinner; I made delicious cake balls with leftover cake (just baked and left alone) and frosting from when my hubby made my atrociously ugly birthday cake!
 
Monday - Steak fajitas with rice

Tuesday - Chicken sausages on buns with fries and broccoli/asparagus

Wednesday - Beer chili in the crockpot

Thursday - Fresh homemade pasta from Italian Corner Deli! I'm buying a pound of pasta and making it at home along with some meatballs in the crockpot

Friday - Pork chops, apple sauce and broccoli

Saturday - I'm babysitting - my hubby is on his own!

Menu Plan Monday: 1/13 - 1/19

 
Sunday - Family Dinner; we made pigs in a blanket using Johnsonvilles Lil' Smokies I had in the freezer and I also brought a few cookies I made with Pillsbury cookie mixes I got for 50 cents each at the Dollar Tree
 
Monday - Slow Cooker French Dip Sandwiches (I hope these taste as good as they look!), ruffled chips and salad

Tuesday - Stromboli - 2 different types: ham and pepperoni and salad

Wednesday - Pasta w/ frozen meatballs

Thursday - Turkey burgers, fries and salad

Friday - Possibly out to dinner with a friend for his 30th birthday

Saturday - Pork chops, apple sauce and broccoli
