What's Cookin' Wednesday: Funfetti Cookie Sandwiches


For family dinner last Sunday, we were asked to bring dessert. My husband, after assessing our pantry, decided he wanted cake. I associate cake with birthdays and only birthdays, and since it wasn't anyone's birthday, I wasn't feeling it.

To satisfy us both, I found this great recipe which turns cake into a not-so-cake-like dessert.

Funfetti Cookie Sandwiches adapted from Risa at Baked Perfection

 
makes approximately 24 sandwich cookies, depending on how big you make your cookies
Ingredients
  • 1 (18.25oz) package Funfetti Cake
  • 2 eggs
  • 1/3 cup vegetable oil
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • half tub of frosting (any flavor, your choice) **originally recipe gives a vanilla frosting recipe
  • sprinkes/jimmies (you can omit these if you want)
Directions
Preheat oven to 375 degrees. Pour cake mix into a large bowl. Stir in eggs, oil, milk, and vanilla until combined. Drop teaspoons of dough onto an ungreased cookie sheet. Bake 7-9 minutes in the preheated oven. The bottoms will be light brown. Move cookies to a cooling rack, cool completely before assembling.
 
Frost bottom side of half the cookies. Top with unfrosted cookie. Roll edges in assorted sprinkles.

What's Cooking Wednesday: Crockpot Chourico & Peppers


I'm half French, which is where my maiden name, Lachapelle, comes from. But most of the rest of me is Portuguese. My mom's side of the family is extremely invested in their Portuguese heritage and this shines through their food. Luckily, we also live in an area where there is a large population of people who are Portuguese. As a result, you don't have to go very far to find some great Portuguese food like mozambique, biscuitos, and chourico and peppers.

Now chourico is not produced chour-ee-co. It's actually should-eeees. Don't get it confused with the Spanish style sausage chourizo -- that's very different!

Here's an easy way to make chourico and peppers and not have to slaver over a saucepot on your range for hours.

Crockpot Chourico and Peppers, adapted from Allrecipes.com


Ingredients
1 pound chourico sausage, casings removed and crumbled (I used ground chourico)
1 green bell pepper, seeded and chopped (I had some already chopped and frozen)
1 sweet onion, peeled and chopped (I only had yellow onions)
1 (6 ounce) can tomato paste (I only had a 15 oz can of diced tomatoes - I used the whole can)
1/2 cup red wine (I used chicken stock made with a boullion cube)
1/2 cup water
2 tablespoons crushed garlic (I used garlic powder)
 
Directions           
In a slow cooker, combine the sausage, green pepper, onion, tomato paste, wine, water, and crushed garlic.
Stir so that everything is evenly distributed.
Cover, and set on Low. Cook for 8 hours.
Uncover the pot, and cook an additional 2 hours to allow some of the liquid to evaporate.
Serve over rice, or with Portuguese rolls.

What's Cookin' Wednesday: Candy Bar Trifle

 
Candy Bar Trifle
 
Ingredients:
1 box of cake mix (and ingredients to make it)
1 box of pudding mix (and ingredients to make it)
1 container of Cool Whip
any candy bar (crunchy works best - think Heath bar, Snickers, etc.  I let my husband pick and he chose Milky Way)
1 shot or so of Kahlua or Baileys (completely optional)
 
 
Bake your cake. Then cut it into cubes. You won't end up using all the cake, so you can make an additional trifle or just eat the cake with your hands like I do.


While your cake is cooling, make your pudding and stick it in the fridge to chill.

Cut up your candy bars. Again, crunchy is best. Hubby wanted Milky Way so he got Milky Way.

So you drop a bunch of cake at the bottom. Drizzle some Kahlua or Bailey's on top (if you want), throw some pudding on top of that, then top with cool whip. Drop a handful or so of your candy bits on top of that. Then do it all over. You can keep doing this 'til you run out of ingredients or space in your trifle dish. I could only do two layers of everything.


Make sure you've got candy bits to put on top so people know what's in your trifle!
 
Now I've done trifle with strawberry cake and strawberries (instead of candy), white or yellow cake with oreos.... There really is no wrong way to make a trifle. Think about combos you like and try to find a cake/pudding/accessory mix you can use!

What's Cookin' Wednesday: Erica's Stuffed Mushrooms

 
 
This is my husband's cousin's recipe. Erica is a great cook and gave me her recipe a few years ago. Lots of my friends beg me to bring these to their parties... they're a great hit!

Erica's Stuffed Mushrooms
 
Ingredients
  • 2 packages mushrooms, cleaned and stems removed
  • 1 can chopped clams
  • 1 small onion, finely diced
  • 1 package saltines
  • 1/2 cup butter, melted
  • block of sharp cheddar ( cut into pieces about 1/4 inch thick)
  • bacon
  • garlic powder
  • black pepper
Directions
Melt butter in a bowl and add saltines, onion, clams with juice, garlic powder and black pepper. Dice about half of the mushrooms stems and add to mixture. Fill mushroom caps with mixture. Top with a piece of bacon and cheese and secure with toothpicks. Bake at 375 degrees for approx. 35 to 40 minutes.

What's Cookin' Wednesday: Portuguese Biscoitos (Biscuits)



Portuguese Biscoitos (Portuguese Biscuits)

Biscoitos (sounds like bish-kurts) are delicious little biscuit-cookies. Dunk them in coffee or milk and they'll melt in your mouth. Eat them by themselves and you'll keep sneaking them 'til they're gone. These are a Portuguese delight and I'm a Portuguese girl at heart, despite my new Irish last name!

Ingredients
  • 3 C flour
  • 3 eggs
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick butter/margarine
  • 1/2 tsp vanilla
  • 1 C sugar
 
Directions
Preheat the oven at 350 degrees.
Beat eggs, butter, sugar and vanilla.
Add dry ingredients and mix well.
Roll into balls. You may need extra flour to do this (IT'S SO STICKY!)
Break into small balls and shape/roll into circles (like donuts with a hole in the middle).
Bake on a greased cookie sheet for 15-20 minutes.
*Brush with beaten egg before baking.

Makes about 3 dozen.

What's Cookin' Wednesday: Easy Banana Cream Pie

Introducing a new series: What's Cookin' Wednesday!




Easy Banana Cream Pie (adapted from Kraft Recipes)


Ingredients
  •  2 medium bananas, sliced (I drop into lemon juice really quick to keep from browning)
  • 1 ready to use graham cracker crumb crust (6 oz) OR graham cracker crust recipe (see below)
  • 2 1/2 C milk
  • 2 pkg instant vanilla pudding
  • 1 container of cool whip (thawed) (8 oz)
Directions
Place half of the banana slices on bottom of crust.
Pour milk into large bowl, add dry pudding mixes. Beat with wire whisk 2 minutes or until well blended.
Gently fold in half of the cool whip.
Spoon half of the pudding on top of banana-topped crust.
Top with remaining banana slices.
Cover with remaining pudding mixture.
Refrigerate 3 hours or until set. Serve topped with remaining cool whip.

You can substitute the vanilla pudding with chocolate (or any flavor you think goes well with banana). You can also substitute the cool whip with any flavor cool whip you think goes well with banana (they have cinnamon, french vanilla and chocolate out now!)

Graham Cracker Crust Recipe

1/3 C melted butter
1 1/2 C graham cracker crumbs
1/4 C sugar


Preheat oven to 375 degrees. Mix butter, graham cracker crumbs and sugar until well combined. Press into a 9 or 10 inch pie pan, making sure to bring crust up towards sides of pan. Bake approx. 8-10 minutes. Let cool before filling.
