What's Cookin' Wednesday: Spaghetti Squash Mac 'n Cheese

I've mentioned before that I've had biweekly visits to a dietitian for over a year now. Not only does she provide the accountability I need, but she also gives me tons of new recipes to try so I never get bored with my low-carb "health" food.

She had given me a recipe adapted by Evolution Nutrition for Spaghetti Squash Mac 'n Cheese. I have adapted this recipe to make it my own and to kick up the protein in it. It's quite similar to the recipe found on PopSugar.

Ingredients

2-3 lb spaghetti squash
cooking spray
1 Tbsp olive oil
1 Tbsp whole-wheat flour (regular flour works too)
1 C low-fat milk
1 C reduced fat cheddar, shredded
1/2 C grated parm
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp red pepper flakes
1/2 can of kidney beans, drained
taco chicken* (see below for recipe)

Directions
Preheat the oven to 350 degrees. Cut a spaghetti squash in half, lengthwise, and scoop out the seeds. Spray the cut side with cooking spray and place cut side down on a cookie sheet also sprayed with cooking spray. Roast for an hour. Let cool until handleable. Fork shred the squash into a bowl and set aside.

In a sauce pan on medium heat, heat oil and whisk in flour. Whisk in milk until heated through. Lower heat and whisk in cheese, stirring until melted. My cheese never completely "melted," but no worries - it should work out in the end! Stir in spices until well mixed.

Pour sauce over spaghetti squash. Pour in beans and chicken. Mix well. Pour into a casserole dish and bake at 350 degrees for approximately 15 minutes or until bubbling. This easily makes 4 servings.

Taco Chicken
Drop in a couple of boneless, skinless chicken breasts into a crockpot. They can be defrosted or frozen. Pour in a jar of salsa, whatever is your favorite flavor. Set on low for 6-8 hours. Fork shred and use in quesadillas, tacos, casseroles, over salad... almost anything!

Menu Plan Monday: 7/6 - 7/12

I hope everyone had a wonderful and safe Fourth of July! I had my fair share of cookout food so I think I can shy away from a regular burger or hot dog for awhile.

Monday - Spaghetti squash mac n' cheese - this recipe is coming right up in this week's What's Cookin' Wednesday post - stay tuned!

Tuesday - Banana split and strawberry crepes

Today marks one year since our beloved furbaby, Blue, passed. One of her favorite foods was crepes. If you left your plate for even 10 seconds, she'd sneak in for a taste. We're having crepes in her honor as we remember all the great times we had with her in her 16+ years of life.

Wednesday - Buffalo chicken burgers with baked beans and salad

Our neighbor has been gracious enough to share her lettuce harvest, so we've get lettuce for days that we must use up!

Thursday - Baked chicken, baked potato, broccoli and salad

Friday - Out to eat

Saturday - Pork chops, apple sauce, couscous and broccoli

Sunday - Usually this is family dinner night, but our family has left us for vacation to Myrtle Beach! So we'll have Chinese.... homemade, healthy Chinese that is! General Tso's Chicken

What's Cookin' Wednesday: Magic S'mores Bars

Holidays in Coupon Mama's house are always hectic. Between my family and my husband's, we're constantly bouncing from one house to the next. When I asked hubby what he wanted me to bring to his friend's Fourth of July cookout, he quickly shouted, "something with s'mores!"

So after a bit of searching, we discovered Magic S'mores Bars. They were a hit!

Checkout Sophistimom's recipe for Magic S'mores Bars. Please be aware that they do not set up like a cookie bar and will continue to be gooey. I kept mine in the pan in the fridge until I was ready to cut and serve. I served right from my dish.

Graham cracker crust

Drizzling sweetened condensed milk over the top

Adding marshmallows

Finished product - yum!

MA/RI Fireworks Displays - Inexpensive Family Night Out

I've mentioned before that I grew up in the Bristol-Warren area - an area well-known for its crazily patriotic displays and the oldest Fourth of July Parade in the nation. Part of the Fourth of July festivities included oohing and aahing at the fireworks displays at Independence Park in Bristol. It  was an inexpensive, fun night out for my family. My mom would bring a cooler of sodas and juice boxes and a couple of bags of chips and cheese doodles and we'd sit out on a blanket and get eaten by mosquitoes while watching the beautiful fireworks in the sky.

No matter what part of RI or MA you're from, there's bound to be a fireworks display nearby. Check out this list for all of the local area displays and Happy Fourth of July!

Providence Restaurant Week(s) is Back! 7/12 - 7/25

It's back!! Providence Restaurant Weeks has returned. They finally changed it to weeks from week!

Starting July 12 and running through July 25, many local area restaurants (not all in Providence) are participating in some great prix fixe menu options or Buy 1 Get 1 free deals.

At most restaurants, lunch and dinner prix fixe menus are available.
Lunch - $14.95
Dinner - $29.95 or $34.95 depending on the restaurant.

These great prices do not include beverages, gratuities or anything off the prix fixe menu.

My husband and I love to use Restaurant Week to try out new restaurants that would otherwise leave our pockets empty. Last year, we took my father to Capital Grille for his birthday during Restaurant Week. Even though we purchased off the prix fixe menu, when we told our hostess we were celebrating his birthday, they decorated the table with birthday confetti and brought out birthday candles with dessert.

Check out the list of participating restaurants to see if your favorite is on the list or perhaps so you can find a new favorite!

Menu Plan Monday - 6/29 - 7/5

It's been awhile since I've menu planned. As a result, my stockpile in my pantry and my freezer has run amok. I've got stuff in the back of the freezer I don't even know about, some of my pantry stockpile has expired and we've gone out to eat on several occasions simply because I don't have the energy to cook come dinnertime or I forgot to take something out to defrost.

This just proves how integral it is to our family that I menu plan. In addition, my husband was recently diagnosed with high cholesterol - something that unfortunately runs in his family. As a result, we've been making changes here and there to what we eat while we're at home.

Monday - Ground turkey American chop suey

with red peppers, broccoli/cauliflower and whatever other veggies I can hide in it. I also sneak some beans in my chop suey - sometimes I'll put some drained kidney beans or I'll smash up half a can of chickpeas. It makes the sauce creamy and thick and the rest of my family has no idea.

Tuesday - Sauteed shrimp naan pizza

I use the 90 calorie Flat-Out wraps as my base and my husband uses wheat naan bread. We add sauteed red peppers and onions and a bit of Sriracha for a kick

Wednesday - My husband's away on business so my sister and I will probably have breakfast for dinner - our favorite go to when hubby's away.

Thursday - Chicken quesadillas

with reduced fat cheese, avocado and sauteed onions, peppers and mushrooms. I make my chicken in the crockpot. Drop a couple of large chicken breasts in a slow cooker along with a jar of salsa. Set it low for 7-8 hours and then you can fork shred it in no time. I keep leftovers in the fridge for sandwiches, salads and tacos for lunch later in the week.

Friday - It's the 3rd of July and I grew up participating in every single Fourth of July festivity available in Bristol, RI. This includes the Bristol Fourth Fireworks! Therefore, we'll probably head out to dinner near Bristol so we get prime seating for the fireworks display.

Saturday - Fourth of July cookout; we'll be bringing a dish but it's currently to be determined. Any suggestions!?

Sunday - Every year my in-laws throw an enormous Fourth of July bash. We'll be heading to their house and will spend the majority of the day there.

My Daddy and the girls at the Bristol Fourth of July Parade in 1991. Nicole on the left, me in the! middle and Stephanie on the right. Happy Fourth of July!!

Adopt, Don't Shop! Caturday Special: Kittens Galore!

I started volunteering at the Seekonk Animal Shelter back in December. I've always wanted to save the kitties - one kitty at a time. But since my husband put the kay-bash on my kitty-saving efforts after two kitties, I must devise a different plan for saving them!

This is a new series I plan on continuing as long as there are cats available for adoption at the Seekonk Shelter. Although called Caturday, it will also include dogs available for adoption too.

Owning a pet is an expensive endeavor. They're like children - you need to feed them, toilet them, take them to the doctor's, buy them toys.... it all adds up. So why on earth would someone want to dole out more money by buying a pet when you can get great pets through adoption!?

I'd like to think that it's plain common sense not to leave your pet in the car while you run into the grocery store or the post office or the bar or anywhere else for that matter... you wouldn't leave your infant in the car, would you? Despite what I think is common sense, I frequently see pets, especially dogs, left in unattended cars even during these exceptionally hot days.

The temperature in a car rises much quicker than the temperature outside. It takes mere minutes for the temperature to become fatal for an animal. In the state  of Massachusetts, causing an animal to be subjected to any sort of unnecessary cruelty or suffering can be punishable by up to one year of imprisonment or a fine of $1000. If you're planning to run errands, leave your pet at home!

And this week's Caturday is dedicated to our many kittens!

In the last several weeks, the Seekonk Animal Shelter has taken in at least two separate litters of kittens. These little ones are just now turning about 8 weeks old and are ready to be adopted! We have a mixture of males and females. The gingers above (orange) are all males. The very patriotic looking sweetpea on the bottom is a female as is the other tiger/striped kitty.

Each will come dewormed, with initial booster vaccines and microchipped. If they are not spayed or neutered prior to leaving the shelter, you will be required to have this done by a given deadline as part of your adoption contract. How can you resist these tiny, fuzzy faces?!

If you're interested in adopting any animal from the Seekonk Animal Shelter, here is the application for adoption.

Don't shop, Adopt!

DIY Friday - My Father's Day (or Dad's Birthday) Project

I know Father's Day has already passed, but I wanted to show you how easy (and inexpensive) it can be to come up with a cute Father's Day gift. We call my husband "Daddy" at home. Now neither of us have human children, but we do have three furry babies and a late furry baby that we consider our pride and joy.

So every Father's Day, the kids get their Daddy something, but this year we wanted to be a bit crafty and take on a photo project.

Here's our project's inspiration from Brassy Apple

So I ran out to Michael's and bought 3 wooden distressed-style letters spelling out DAD. They were $1.50 each and I had a coupon for 30% off my entire order so I paid a tad bit over $3 for the three letters. We actually used them as decorations for my own father's birthday party later!

I then set out to take my kids' glamour shots. Believe it or not, Riley, our pup, was the easiest to photograph so long as I could keep the wooden block out of his pup mouth!

Our indoor kitty, Zoe, was upset that I disrupted her nap to take her photo.

And our indoor/outdoor adventurer, Selina Kyle, just wanted me to pet her and drool on me. She was the toughest to photograph.

So after a bit of time photographing and laughing my butt off at some of the ridiculous pictures I captured, I finally got some pictures decent enough to turn into a Father's Day gift for their Daddy. I had a coupon for $20 off any $20+ purchase at Shutterfly, so I turned their photos into a card and a really cute mug. *Always check out the Special Offers page at Shutterfly to see what deals they've got going on!

Total cost:
$3.XX for wooden blocks (which I plan to reuse as decorations every Father's Day)
$9.XX for shipping for the mug and card since my coupon didn't include shipping fee)
